I like to be pleasantly surprised by bar-related knowledge, and this was the most recent surprise I learned during a staff training last week here in Portland. Head bartender Jared Miller shocked me by telling me that he cuts his citrus peels with one of the cheese slicers they use at the wine bar he works at. So I tried it, and lo and behold, it might be easier, and certainly safer, than using my long-time favorite, the OXO Y-peeler. (I lost every fingertip and part of a nail bed to this peeler, I’m sure you have done the same.
