Holy smokes – these Gochujang Burgers are where they are! The kimchi and bacon jam is a 10/10 – smoky, sweet, tangy, and just a little spicy. Strange as it may sound, a slice of gouda cheese makes it even more wonderful. All my friends were thrilled!

How to prepare these Gochujang burgers
Step 1: Prepare the bacon and kimchi jam
I prefer kimchi in small pieces, so I cut it (along with the bacon).

Fry the bacon and add the kimchi and brown sugar – this makes a VERY delicious, jam-like mixture.

Step 2: Mix the chicken burgers
Mix all the ingredients – I usually do this by hand…

…and form 4 patties.

Step 3: Fry the burgers
I use a grill pan and like these with a slice of Gouda cheese on them. (!!)

Step 4: Assemble the burgers
Start with toasted buns, mayonnaise and burgers.

Add the kimchi bacon jam and cucumber slices.

And finish with a small tangle of cilantro.

All right! Wait there! I just can’t see how good these burgers are!
This flavor combination was, in all honesty, my attempt to keep finding ways to eat these teriyaki chicken burgers. I really love them so much. To continue with more of that energy I used the same basic recipe but giving them a slightly different flavor (gochujang never disappoints) I added this kimchi and bacon jam (the same one I we used at the time for the kimchi grilled cheese), and hello. GOOD MORNING. One of my favorite sticky, smoky, sweet and spicy burgers was born.
The flavors – I mean, what can I say. They will knock your socks off. The chicken burgers are just a tad spicy, the cucumbers and cilantro keep it fresh and crunchy, and the kimchi and bacon jam is smoky, sticky, and sweet and everything I want in a burger topping.
And I know you’re going to question it, but that slice of gouda! It’s golden.

Gochujang Chicken Burgers:

- Kimchi and bacon jam: In a large skillet over medium heat, add the bacon pieces. Fry until golden brown and crispy and fat is melted. Drain a little oil (optional) and add the kimchi and brown sugar to the pan. Sauté for 3-5 minutes until caramelized and bubbling.
- Chicken burgers: Mix the chicken, panko, gochujang, garlic powder and salt until well combined. Form 4 to 5 burger patties.
- Prepare the burgers: Transfer the burgers to a large skillet. Add a drizzle of avocado oil and fry until golden on the outside and 160 degrees inside.
- Assemble the burgers: Toast your buns in the pan; serve the burgers on toasted buns with a layer of kimchi bacon jam, greens of your choice and mayonnaise. So everything is fine.

The Beyond or Impossible “meat” would make a perfect vegetarian sub. The kimchi and bacon jam would be more difficult to replicate, but I think you could achieve the same general effect by sautéing the kimchi with brown sugar and a little smoked paprika (without bacon).
For chicken burgers and/or bacon jam that won’t be eaten that night, I’ll store them in the fridge for another 2 days.
For a gluten-free version, use gluten-free buns and breadcrumbs! For a dairy-free version, omit the cheese.
